Vegan Brownies

Vegan Brownies

Note: I am not a photographer, nor do I play one on TV.

Who doesn’t like a challenge? How about making brownies without butter, sugar, eggs etc.? This vegan version doesn’t even need baking.

  • 150g shelled walnuts
  • 125g shelled and skinned almonds
  • 350-400g pitted dates (see note)
  • 75g cocoa powder
  • 1-2 tsp ground coffee

Roughly chop 50g of the walnuts and put aside.

Dump the remaining 100g of the walnuts and all of the almonds into a food processor and mix until ground to a flour. Add the coffee and cocoa powder, pulse some more to mix, then transfer to a bowl.

Dump the dates into the food processor and chop until you have sticky small bits. Dump into a separate bowl.

Dump the nut/cocoa mixture back into the food processor, and add the date mixture bit by bit until you get a sticky, dough-y consistency, and a ball of the mix stays together when squeezed in your hand. Transfer the mixture into a bowl, and mix in the roughly chopped walnuts.

Line a rectangular baking pan with baking paper, dump the brownie mixture in, and press strongly until the mixture is flat and compact.

Let set in the refrigerator or freezer before cutting. Store in an airtight container.

Note: the amount of dates you’ll need depends on how moist they are. If you use (expensive) big, juicy Medjool dates, you’ll need less than if you use cheap dried dates from the supermarket.
